Ingredients

  • 1 can of callaloo
  • Okra, chopped
  • Ginger, a ½ thumb (1.5 tbsp), diced
  • 1 small yellow onion, chopped
  • 1 red bell pepper, sliced
  • Pinch of salt
  • Pinch of black pepper
  • 1 tbsp vegetable oil (or the oil of your choice)
  • 1 small tomato, sliced
  • ½ cup carrots, thinly sliced
  • 2 teaspoon paprika

Directions

  1. In a saucepan heat oil until shimmering. Add the chopped onion and saute until golden brown, about 5 minutes.
  2. Add in the okra, carrots and sliced red bell pepper. Saute for 10 minutes.
  3. Add in callaloo and tomato; saute for another 5 minutes.
  4. Enjoy!
