Spiced molten chocolate cake

This decadent sugar-free dessert is taken to another level with the addition of warm spices. Whole wheat flour can be used for a fibre boost.

Ingredients

  • 1 1/3 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup ghee or clarified butter + more for greasing
  • 1 cup cocoa powder
  • 1 cup sugar substitute like allulose or erythritol
  • 3 eggs
  • 1 teaspoon vanilla
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Flaky sea salt (to garnish)

Directions

  1. Preheat oven to 350 °F (180 °C). Grease 4 ramekins and set aside.
  2. Stir together flour, baking powder and salt in a small bowl.
  3. In a large saucepan, melt ghee. Remove from heat.
  4. Stir in cocoa powder.
  5. In same saucepan, mix in sugar substitute, eggs, vanilla and all your spices.
  6. Mix in dry ingredients from step 1. Stir until all is incorporated.
  7. Pour into greased ramekins and bake for 12-15 minutes.

Try to resist the urge to dig into these right out of the oven. Give the cakes 2-3 minutes to cool. Enjoy!
